A simple, no-bake dessert that combines the natural sweetness of ripe strawberries with a rich, creamy cheesecake filling. These vibrant, bite-sized treats are perfect for Easter or any spring celebration.

Ingredients

8 ounces full-fat cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons heavy cream or milk

1 to 2 pounds large, ripe strawberries

Gel food coloring (pink, blue, yellow, green)

Easter-themed sprinkles (optional)

Instructions

1. Gently wash the strawberries and pat them completely dry.

2. Hull the strawberries by removing the green tops and carefully scooping out a small cavity in the center.

3. Slice a tiny bit off the bottom of each strawberry so they can stand upright.

4. In a medium bowl, beat the softened cream cheese with a mixer until completely smooth.

5. Add the powdered sugar and vanilla extract, and beat on low speed until well combined.

6. Mix in heavy cream or milk, one tablespoon at a time, until the filling reaches a pipeable, frosting-like consistency.

7. Divide the filling evenly into small bowls, one for each color.

8. Add a drop of gel food coloring to each bowl and stir until evenly distributed.

9. Transfer each colored filling into a separate piping bag.

10. Pipe the filling into the hollowed-out strawberries, creating a swirl on top.

11. If using, add sprinkles immediately after piping.

12. Arrange the stuffed strawberries on a platter and chill for at least 30 minutes to set.

Notes

For best results, use large, firm strawberries and ensure cream cheese is fully softened for a smooth filling. These are best enjoyed the day they are made.
