A festive and delicious dessert featuring a soft sugar cookie crust shaped like bunny ears, topped with a luscious cream cheese frosting and a vibrant assortment of fresh fruits.

Ingredients

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 large egg

1 teaspoon vanilla extract

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

8 ounces cream cheese, softened

1/4 cup unsalted butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

Strawberries, sliced

Blueberries

Kiwi, peeled and sliced

Mandarin oranges, drained

Raspberries

Grapes, halved

Blackberries

Instructions

1. In a large bowl, cream 1 cup butter and granulated sugar, then beat in the egg and 1 tsp vanilla extract.

2. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add the dry ingredients to the wet ingredients until just combined.

3. Divide the dough in half and shape each into a long oval (10-12 inches) on a parchment-lined baking sheet to resemble bunny ears.

4. Preheat oven to 350°F (175°C) and bake for 12-15 minutes, or until edges are lightly golden.

5. Let the crust cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

6. To make the frosting, beat the cream cheese and 1/4 cup butter until smooth, then mix in powdered sugar and 1 tsp vanilla extract.

7. Spread the cream cheese frosting evenly over the cooled cookie crust.

8. Arrange your desired fresh fruits over the frosting and serve.

Notes

The cookie crust can be baked up to two days in advance and stored in an airtight container. Assemble the pizza just a few hours before serving to prevent the crust from becoming soggy. For a glossy finish, brush fruit with a thin layer of melted apricot jelly.
