Ingredients
8 to 10 fresh mint leaves
2 to 3 lime wedges (or 1 ounce fresh lime juice)
3/4 to 1 ounce lavender syrup
Ice (crushed or cubed)
4 to 6 ounces chilled club soda or sparkling water
Mint sprig, lavender sprig, and lime wheel for garnish (optional)
Instructions
1. Choose a highball or Collins glass and add the mint leaves to the bottom.
2. Add lime wedges (or pour in fresh lime juice).
3. Gently muddle a few times to release mint oils and lime juice without shredding the mint.
4. Pour in the lavender syrup.
5. Fill the glass nearly to the top with ice.
6. Top with chilled club soda or sparkling water.
7. Stir gently from the bottom up to combine without losing too much fizz.
8. Taste and adjust with a splash more syrup or lime juice if desired.
9. Garnish with a mint sprig, a lavender sprig, and a lime wheel.
10. Serve immediately while cold and bubbly.
Notes
Homemade lavender syrup: simmer 1 cup water + 1 cup sugar until dissolved, steep 2 tbsp culinary lavender off-heat for 30–60 minutes, strain, and chill (keeps ~2 weeks).
For a less bitter mint flavor, “clap” the mint leaves in your hands before adding instead of heavy muddling.
Crushed ice gives a classic mojito feel and helps marry flavors quickly.
Batching: mix lime juice, lavender syrup, and lightly bruised mint in a pitcher; add soda to each glass right before serving to keep it fizzy.
Use culinary-grade lavender only, and start with less syrup—you can always add more.
