Ingredients
1 1/2 cups all-purpose flour

1/4 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup light brown sugar
1/4 cup granulated sugar
2 large eggs, room temperature
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 cup fresh strawberries, diced
For the Lemon Glaze:
1 cup powdered sugar
1–2 tablespoons fresh lemon juice
1–2 teaspoons milk or cream
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
3. Add eggs one at a time, whisking well after each addition.
4. Stir in lemon zest, lemon juice, and vanilla extract until combined.
5. In a separate bowl, whisk together flour, baking powder, and salt.
6. Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
7. Gently fold in the diced strawberries, distributing them evenly.
8. Spread the batter evenly into the prepared baking pan.
9. Bake for 25–30 minutes, or until edges are golden and a toothpick inserted in the center comes out with moist crumbs.
10. Allow blondies to cool completely in the pan on a wire rack.
11. In a small bowl, whisk together powdered sugar and lemon juice.
12. Add milk or cream a little at a time until the glaze reaches a smooth, drizzle consistency.
13. Lift cooled blondies from the pan using parchment overhang.
14. Drizzle lemon glaze evenly over the top.
15. Let glaze set for 15 minutes, then slice into squares and serve.
Notes
Do not overbake to maintain a soft, chewy texture.
Use fresh lemon juice and zest for the brightest flavor.
If using frozen strawberries, add them directly from frozen and toss lightly in flour first.
For extra decadence, fold in 1/2 to 1 cup white chocolate chips.
Store in an airtight container at room temperature for up to 3 days or refrigerate up to 5 days.
Freeze unglazed blondies tightly wrapped for up to 3 months.
