Ingredients
2 ounces tequila blanco
1 ounce fresh lime juice
1 ounce spiced hibiscus syrup
1 egg white or 1 ounce aquafaba
1 to 2 ounces grapefruit soda
Ice cubes
Dehydrated grapefruit wheel or lime twist for garnish (optional)
Instructions
1. Add tequila, fresh lime juice, spiced hibiscus syrup, and egg white or aquafaba to a cocktail shaker.
2. Seal and shake vigorously without ice for about 30 seconds to create foam (dry shake).
3. Open the shaker, add ice, reseal, and shake again for 15–20 seconds to chill.
4. Double strain the mixture into a chilled coupe or rocks glass.
5. Gently top with grapefruit soda to preserve the foam.
6. Garnish with a dehydrated grapefruit wheel or lime twist.
7. Serve immediately and enjoy responsibly.
Notes
To make spiced hibiscus syrup, simmer equal parts water and sugar with dried hibiscus, cinnamon sticks, star anise, and cloves for 15–20 minutes, then strain and cool.
Aquafaba is a great vegan substitute for egg white and creates a similar foam.
Use quality tequila blanco for a clean agave flavor or try mezcal for a smoky variation.
Chill your glassware beforehand for best results.
Store homemade syrup in the refrigerator for up to 3 weeks.
