Description

A comforting one-pot slow cooker meal featuring tender beef bites and buttery potatoes infused with garlic and herbs.


Ingredients

2 lbs beef chuck roast or stew meat, cut into bite-sized pieces

1.5 lbs baby potatoes, halved

6 cloves garlic, minced

1/2 cup unsalted butter, melted

1 tsp dried thyme

1 tsp dried rosemary

1 tsp paprika

Salt and black pepper, to taste

1/2 cup beef broth

1 tbsp Worcestershire sauce (optional)

Fresh parsley, chopped (for garnish)


Instructions

1. Season beef chunks with salt, pepper, paprika, thyme, and rosemary.

2. (Optional) In a hot skillet, sear beef pieces on all sides until browned to enhance flavor.

3. Place halved baby potatoes at the bottom of the slow cooker.

4. Add the seared beef bites over the potatoes.

5. In a small bowl, mix melted butter with minced garlic and Worcestershire sauce (if using).

6. Pour the garlic butter mixture evenly over the beef and potatoes.

7. Add beef broth to the slow cooker.

8. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, stirring once halfway through.

9. Check beef for tenderness with a fork; it should be fall-apart tender.

10. Garnish with chopped fresh parsley before serving.

Notes

For best flavor, use beef chuck roast with good marbling.

Searing the beef before slow cooking is optional but recommended for richer flavor.

To reduce carbs, substitute potatoes with cauliflower or mushrooms.

Leftovers can be used in sandwiches, hashes, or stuffed into baked potatoes.

Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
