Ingredients
2 oz Blanco tequila
1 oz fresh lime juice
0.75 oz passionfruit puree or passionfruit liqueur
0.5 oz raspberry syrup or 5–6 fresh raspberries
0.75 oz simple syrup (adjust to taste)
1 egg white (or 1 oz aquafaba for vegan option)
Ice
Fresh raspberries, lime wheel, or passionfruit half for garnish
Instructions
1. If using fresh raspberries, place them in a cocktail shaker and gently muddle to release their juices.
2. Add tequila, fresh lime juice, passionfruit puree or liqueur, raspberry syrup (if not using fresh berries), simple syrup, and egg white or aquafaba to the shaker.
3. Seal the shaker without ice and shake vigorously for 15–20 seconds to create a rich foam (dry shake).
4. Open the shaker and fill it with ice.
5. Shake again for another 15–20 seconds until well chilled (wet shake).
6. Double strain the mixture through a Hawthorne strainer and fine-mesh strainer into a chilled coupe or rocks glass.
7. Allow the foam to settle and form a thick layer on top.
8. Garnish with fresh raspberries, a lime wheel, or half a passionfruit.
9. Serve immediately and enjoy responsibly.
10. For a spicy variation, muddle a thin slice of jalapeño before shaking.
Notes
Always use freshly squeezed lime juice for the brightest flavor.
For extra stable foam, try the reverse dry shake method.
Blanco tequila is recommended for a clean, crisp taste that highlights the fruit.
To make a mocktail version, replace tequila with a non-alcoholic spirit or soda water.
