A bright, tangy, and vibrant green Leprechaun Lemonade made with fresh lemon juice, pineapple, and a splash of lime—perfect for St. Patrick’s Day parties and festive celebrations.

Ingredients

2 cups fresh lemon juice (about 810 lemons)

1/4 cup fresh lime juice

1 1/2 cups granulated sugar

6 cups cold water (divided)

1 cup pineapple juice

Green food coloring (a few drops)

Ice for serving

Lemon and lime slices for garnish

1 1/2 cups vodka or white rum (optional, for adult version)

Instructions

1. In a small saucepan, combine sugar and 1 cup of water, heating over medium while stirring until sugar fully dissolves to create a simple syrup.

2. Remove syrup from heat and allow it to cool completely.

3. In a large pitcher, combine fresh lemon juice, lime juice, pineapple juice, and cooled simple syrup.

4. Add the remaining 5 cups of cold water and stir well to combine.

5. Taste and adjust sweetness by adding more water or sugar if desired.

6. Add green food coloring one drop at a time, stirring until the desired vibrant green color is achieved.

7. Refrigerate for at least 1 hour until thoroughly chilled, then serve over ice and garnish with citrus slices. Add alcohol per glass or stir into the pitcher if making the adult version.

Notes

For a sparkling version, replace 2 cups of water with chilled club soda added just before serving.

To reduce sugar, substitute with monk fruit or stevia following package conversion guidelines.

Natural coloring options include a small amount of spinach juice or spirulina powder.

Store covered in the refrigerator for up to 5 days.

For parties, prepare a day ahead and add ice just before serving to prevent dilution.
