Ingredients
1 lb ribeye or sirloin steak, thinly sliced
1 tbsp olive oil or avocado oil
1 green bell pepper, sliced
1 red bell pepper, sliced
1 small onion, sliced
1/2 cup mushrooms, sliced (optional)
1/2 tsp garlic powder
Salt and pepper to taste
6 slices provolone or mozzarella cheese (or low-carb tortillas)
Lettuce leaves for fresh wrap option (optional)
Butter or garlic butter for serving (optional)
Instructions
1. Place steak in the freezer for 30 minutes to make slicing easier, then slice into thin strips.
2. Heat oil in a skillet over medium-high heat. Sauté bell peppers, onions, and mushrooms until softened and lightly caramelized.
3. Push veggies to the side, add sliced steak to the skillet, and cook until browned but still juicy.
4. Season everything with salt, pepper, and garlic powder. Stir to combine.
5. Lay out cheese slices, low-carb tortillas, or lettuce leaves. Add a spoonful of steak and veggie mixture to each.
6. Sprinkle with shredded cheese (if not using cheese wraps), then roll tightly.
7. For baked versions, place seam-side down on a parchment-lined baking sheet and bake at 375°F for 10 minutes until cheese melts.
8. For lettuce wraps, skip baking and serve fresh.
9. Drizzle with melted butter or garlic butter if desired before serving.
Notes
Use ribeye for the juiciest texture, but sirloin or flank steak also work well.
For dairy-free versions, substitute with almond-based or cashew cheese and use lettuce wraps.
To prep ahead, store assembled rolls in the fridge for up to 4 days or freeze uncooked for up to 2 months.
Reheat in the oven at 350°F for best texture, or microwave briefly if needed.
