1 lb ground beef (80/20 preferred)

1 tablespoon avocado oil or olive oil

1/4 cup water

2 tablespoons taco seasoning (sugar-free)

1/2 cup shredded cheese (cheddar or Mexican blend) for cheese crisps

Optional: crushed pork rinds as crunch layer alternative

4 large low-carb tortillas (at least 10 inches)

4 small low-carb tortilla “patches” or cut pieces

1/2 cup sour cream

1 cup shredded cheddar or Mexican cheese blend

1/2 cup shredded lettuce

1/4 cup diced tomatoes

Instructions

1. Heat avocado oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess grease.

2. Stir in taco seasoning and 1/4 cup water. Reduce heat and simmer for 5-7 minutes until thickened.

3. Preheat oven to 400°F (200°C). On parchment-lined baking sheet, make four 4-5 inch cheese circles. Bake for 5-7 minutes until crisp and golden. Let cool fully.

4. Chop lettuce and tomatoes. Prepare sour cream and shredded cheese for assembly.

5. Warm large tortillas briefly in microwave or skillet to prevent tearing.

6. Place warm tortilla on a flat surface. Add seasoned beef in center, then cheese crisp, then spread sour cream over the crisp.

7. Top with lettuce, tomatoes, and shredded cheese.

8. Cover center with smaller tortilla “patch.” Fold edges of large tortilla up and over center to seal.

9. Place crunchwrap seam-side down in lightly oiled skillet over medium heat. Cook 2-3 minutes per side until golden and crispy.

10. Let rest 1 minute before cutting and serving. Repeat steps for remaining wraps.

Notes

To avoid tearing, always warm your tortillas before folding and avoid overfilling. Use avocado oil or butter in the skillet for extra flavor and crispiness.
