Ingredients
8 ounces sharp Irish cheddar cheese, freshly shredded
4 ounces cream cheese, softened and cut into cubes
1 cup Irish stout beer (such as Guinness)
1 tablespoon unsalted butter
1 clove garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch of cayenne pepper (optional)
Salt and black pepper to taste
Fresh chives or parsley for garnish
Instructions
1. Melt the butter in a medium saucepan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
2. Slowly pour in the Irish stout and bring to a gentle simmer. Let it cook for 2 to 3 minutes to allow the flavors to meld.
3. Reduce the heat to low and add the cubed cream cheese. Whisk constantly until fully melted and smooth.
4. Add the shredded cheddar in small handfuls, whisking continuously after each addition until completely melted before adding more.
5. Stir in the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and cayenne pepper until fully combined.
6. Taste and season with salt and black pepper as needed. Transfer to a serving bowl, garnish with fresh chives or parsley, and serve warm.
Notes
Always shred cheese from a block for the smoothest texture.
If the dip is too thick, stir in a splash of beer or milk to loosen it.
If too thin, whisk in additional shredded cheese or a small cornstarch slurry.
Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat gently.
