A simple and delicious one-pan meal featuring savory sausage, tender sweet potatoes, and a sticky-sweet honey garlic sauce. It’s the perfect balance of sweet and savory for a satisfying weeknight dinner with minimal cleanup.

Ingredients

1 lb pre-cooked smoked sausage (like Kielbasa), sliced into ½-inch rounds

2 medium sweet potatoes, chopped into 1-inch cubes

1 large bell pepper, sliced (optional)

1 red onion, sliced (optional)

1/4 cup honey

1/4 cup soy sauce (or tamari for gluten-free)

3 cloves garlic, minced

2 tablespoons olive oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh parsley or green onions, for garnish

Instructions

1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.

2. Spread the sliced sausage, cubed sweet potatoes, and any optional vegetables in a single, even layer on the baking sheet.

3. In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, black pepper, and optional red pepper flakes.

4. Pour the sauce evenly over the sausage and vegetables, then toss everything to ensure it’s well-coated.

5. Roast for 25-30 minutes, tossing halfway through, until the sweet potatoes are tender and everything is lightly browned and caramelized.

6. Remove from the oven, garnish with fresh parsley or green onions if desired, and serve warm.

Notes

To ensure proper caramelization, do not overcrowd the pan; use two sheet pans if necessary. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
