Ingredients
1/4 cup dried hibiscus flowers (or 8 hibiscus tea bags)
8 cups of water, divided
1 pound fresh strawberries, hulled and sliced (about 3 cups)
1/4 to 1/2 cup sweetener of choice (honey, agave, maple syrup, or sugar), optional
1/4 cup fresh lemon or lime juice, optional
Ice for serving
Fresh mint sprigs and extra strawberry slices for garnish, optional
Instructions
1. In a medium saucepan, bring 4 cups of water to a boil. Remove from heat and add hibiscus flowers or tea bags. Steep for 10–15 minutes.
2. Meanwhile, in another saucepan, combine strawberries, 1 cup of water, and sweetener (if using). Simmer over medium heat for 10 minutes until strawberries break down.
3. Strain the hibiscus tea into a large pitcher, discarding solids. Strain the strawberry syrup into the same pitcher, pressing to extract all liquid.
4. Add remaining 3 cups of cold water to the pitcher. Stir in lemon or lime juice if using. Mix well and taste for sweetness.
5. Refrigerate the tea for at least 2 hours until fully chilled.
6. Serve over ice in glasses. Garnish with fresh mint and strawberry slices if desired.
Notes
Frozen strawberries may be used in place of fresh—just simmer slightly longer.
To make a sparkling version, replace half the cold water with club soda or sparkling water just before serving.
This tea can be stored in the fridge for up to 4 days.
To make popsicles, pour chilled tea into molds and freeze for 4–6 hours.
