1 (15-ounce) can diced tomatoes, undrained

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded cheddar cheese (optional)

Cooked rice or pasta for serving (optional)

Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook for 3-4 minutes until softened.

2. Add ground beef and cook, breaking it apart with a spoon, until fully browned and no longer pink. Drain excess grease if needed.

3. Stir in minced garlic and cook for 1 minute until fragrant.

4. Add mixed vegetables, undrained diced tomatoes, Italian seasoning, salt, and black pepper. Stir well to combine.

5. Bring mixture to a gentle simmer, reduce heat to medium-low, and cover.
