Ingredients
1 box white or yellow cake mix (15.25 oz)
2 large eggs
1/3 cup vegetable oil
Green gel food coloring
1/2 cup powdered sugar (for rolling)
Red heart sprinkles or candy hearts
Instructions
1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
2. In a large bowl, whisk together the eggs and vegetable oil until smooth.
3. Add green gel food coloring to the wet mixture, mixing until a vibrant green color is achieved.
4. Gradually mix in the dry cake mix until a soft dough forms.
5. Optional: Chill the dough in the refrigerator for 30 minutes for easier handling.
6. Place powdered sugar in a shallow bowl.
7. Scoop about 1 tablespoon of dough and roll into a ball.
8. Roll each dough ball generously in powdered sugar until fully coated.
9. Place dough balls on the prepared baking sheets, spacing them about 2 inches apart.
10. Bake for 8–10 minutes, until edges are set but centers remain soft.
11. Immediately press one red heart sprinkle into the center of each warm cookie and cool on a wire rack.
Notes
Gel food coloring works best for bold green color without thinning the dough.
Do not overbake — cookies should look slightly underdone in the center.
Press heart sprinkles in right after baking so they stick properly.
Cookies can be frozen baked or unbaked for longer storage.
