Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
1 cup creamy ranch dressing
1/2 cup freshly grated Parmesan cheese, plus more for garnish
4 cloves fresh garlic, minced
2 tbsp olive oil
1/2 tsp black pepper
Wooden or metal skewers
1 tbsp fresh parsley, chopped, for garnish
Instructions
1. Cut the chicken into uniform 1.5-inch cubes and place them in a large bowl.
2. In a separate bowl, whisk together the ranch dressing, Parmesan cheese, minced garlic, olive oil, and black pepper.
3. Pour the marinade over the chicken and toss to coat thoroughly.
4. Cover and refrigerate the chicken to marinate for at least 30 minutes, or up to 4 hours for best results.
5. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
6. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
7. Preheat your grill to medium-high heat (400-450°F) and lightly oil the grates.
8. Place the skewers on the grill and cook for 10-15 minutes, turning every 3-4 minutes.
9. Ensure the chicken is cooked through by checking for an internal temperature of 165°F with a meat thermometer.
10. Remove skewers from the grill, let them rest for a few minutes, then garnish with fresh parsley and extra Parmesan before serving.
Notes
For the best flavor, use freshly grated Parmesan and marinate the chicken for 2-4 hours. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. You can also bake these skewers at 400°F for 20-25 minutes.
