1.5 to 2 pounds boneless, skinless chicken breasts

2 tablespoons olive oil
1 cup panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
1 teaspoon garlic powder

1 teaspoon dried parsley or Italian seasoning

Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Pound chicken to 1/2-inch thickness for even cooking. Pat dry and season with salt and pepper.
3. In a shallow bowl, mix panko, Parmesan, garlic powder, onion powder, and herbs. In a second bowl, pour olive oil.
4. Dip each chicken breast in olive oil, then press into breadcrumb mixture to coat all sides.
5. Place coated chicken on prepared baking sheet in a single layer without overlapping.
6. Bake for 20–25 minutes or until chicken is golden brown and cooked through (internal temp 165°F).
7. While baking, melt butter in a saucepan and sauté garlic for 30–60 seconds. Remove from heat and stir in chopped parsley (optional).
8. Remove chicken from oven and optionally brush with garlic butter for added flavor.
9. Let chicken rest a few minutes before serving.
