1 lb ground chicken (93/7 recommended)

3/4 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 small yellow onion, finely chopped

4 cloves garlic, minced

2 large eggs

1/3 cup milk

2 tbsp fresh parsley, chopped

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

Optional Garlic Parmesan Topping:

2 tbsp butter, melted

1 clove garlic, minced

2 tbsp grated Parmesan cheese

Instructions

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Heat a small skillet over medium heat with a little olive oil. Sauté onion for 5 minutes until soft, then add garlic and cook 1 minute. Remove from heat and let cool.

3. In a large bowl, whisk eggs and milk together.

4. Add panko breadcrumbs, Parmesan cheese, parsley, Italian seasoning, salt, and pepper. Stir and let sit 5 minutes.

5. Add ground chicken and cooled onion-garlic mixture. Gently mix until just combined.

6. Transfer mixture to baking sheet and shape into a loaf about 9×5 inches.

7. Bake for 45–55 minutes, until internal temperature reaches 165°F.

8. While baking, mix melted butter, garlic, and Parmesan for topping.

9. During last 10 minutes of baking, brush topping over meatloaf and return to oven.

10. Remove from oven and let rest 10 minutes before slicing.

11. Serve warm with your favorite sides.
