Instructions

1. Pat the steak cubes completely dry with paper towels, then season generously on all sides with salt and freshly cracked black pepper.

2. Heat a large cast-iron skillet over medium-high heat and add the olive oil, allowing it to heat until shimmering.

3. Add the beef cubes in a single layer without overcrowding the pan, cooking in batches if necessary.

5. Remove the seared beef from the skillet while the centers remain rare to medium-rare and set aside on a plate.

6. Reduce the heat to medium-low and add the unsalted butter to the same skillet.
