Ingredients
Arborio rice
Whole milk
Heavy cream
Granulated sugar
Pinch of salt
1 egg yolk (optional)
Vanilla extract
Liquid or gel food coloring (pastel shades)
Instructions
1. Combine rice, milk, sugar, and salt in a saucepan and bring the mixture to a simmer over medium heat.
2. Reduce heat to low and cook for 20-25 minutes, stirring frequently, until the rice is tender and the mixture has thickened.
3. For a richer pudding, temper the optional egg yolk by whisking it with a half cup of the hot pudding, then return it to the saucepan and cook for 2 more minutes.
4. Remove the saucepan from the heat, stir in the vanilla extract, and let the pudding cool for 10 minutes.
5. Divide the pudding among several small bowls and stir a different food coloring into each until you achieve pastel colors.
6. Spoon the colored pudding in alternating layers into clear glasses or jars.
7. Chill the parfaits in the refrigerator for at least one hour before serving.
Notes
The pudding will thicken significantly as it cools. For best results, remove it from the heat when it’s slightly looser than your desired final consistency. The pudding can be made up to two days in advance and stored in the refrigerator.
