A delightful and whimsical twist on the classic brunch cocktail, this Easter Bunny Mimosa is incredibly easy to make and adds a beautiful pop of color and fun to your holiday table.

Ingredients

Chilled Sparkling Wine (dry or brut Prosecco)

1 oz Orange Juice, pulp-free

1 oz Pineapple Juice

0.5 oz Coconut Cream

Optional Garnishes: marshmallow bunny Peeps, pineapple wedges, colored sanding sugar

Instructions

1. Chill champagne flutes and optionally create a sugar rim.

2. Pour orange juice, pineapple juice, and coconut cream into each flute.

3. Tilt the glass and slowly top with chilled sparkling wine until about three-quarters full.

4. Add your chosen garnish and serve immediately.

Notes

For a crowd, mix the juices and cream in a pitcher ahead of time; top individual glasses with sparkling wine just before serving. To make a non-alcoholic version, substitute sparkling wine with sparkling grape juice, cider, or ginger ale.
