A quick and easy one-pan dinner featuring tender chicken in a rich, tangy, and delicious creamy ranch sauce. Perfect for a busy weeknight comfort food meal.

Ingredients

1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

1 tbsp olive oil or butter

2 cloves garlic, minced

1/4 cup chicken broth

8 oz block cream cheese, softened

1 (1-ounce) packet dry ranch seasoning mix

1/4 cup milk or heavy cream

Salt and black pepper, to taste

Optional: 1/2 cup shredded cheddar cheese

Optional: 4 strips cooked bacon, crumbled

Optional: 2 tbsp fresh chives or parsley, chopped for garnish

Instructions

1. Season chicken pieces with salt and pepper.

2. Heat oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown.

3. Remove the chicken from the skillet and set it aside.

4. Reduce heat to medium-low, add minced garlic to the skillet, and cook for 30 seconds until fragrant.

5. Pour in chicken broth to deglaze the pan, scraping up any browned bits from the bottom.

6. Add the softened cream cheese, ranch seasoning, and milk, whisking continuously until the sauce is smooth.

7. Return the seared chicken and any accumulated juices to the skillet.

8. Simmer for 5-10 minutes, stirring occasionally, until the chicken is cooked through.

9. If using, stir in shredded cheese and crumbled bacon during the last minute of cooking.

10. Garnish with fresh chives or parsley before serving.

Notes

This recipe can be adapted for a slow cooker (cook on low for 4-6 hours) or baked in the oven (at 400°F for 20-25 minutes). Store leftovers in an airtight container in the refrigerator for up to 4 days.
