Description

A moist, protein-rich twist on classic banana bread made with creamy cottage cheese for added nutrition and tender texture.


Ingredients

Scale

3 ripe bananas (mashed)

¾ cup cottage cheese (small curd)

2 eggs

½ cup brown sugar

¼ cup melted butter or coconut oil

1 tsp vanilla extract

1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

Optional: chopped walnuts, cinnamon, chocolate chips


Instructions

1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

2. In a large bowl, mash bananas. Add cottage cheese, eggs, brown sugar, vanilla, and melted butter. Whisk until combined.

3. In a separate bowl, mix flour, baking soda, and salt. Add cinnamon here if using.

4. Fold dry ingredients into the banana mixture until just combined—do not overmix.

5. Stir in optional add-ins like nuts or chocolate chips.

6. Pour batter into the prepared pan. Bake for 50–60 minutes, or until a toothpick comes out clean.

7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.

Notes

For a healthier version, swap all-purpose flour for whole wheat or oat flour, and use coconut sugar or maple syrup instead of brown sugar. To boost protein further, add a scoop of vanilla protein powder. This bread keeps well refrigerated up to 7 days or frozen up to 3 months. Try mini muffins for kid-friendly portions!
