Ingredients
1 tablespoon fresh lemongrass (or 1 teaspoon dried)
1 teaspoon fresh ginger slices (or a pinch of ground ginger)
½ teaspoon cinnamon (stick or powder)
1 teaspoon honey (optional)
2 cups filtered water
Instructions
1. Bring 2 cups of filtered water to a gentle simmer, not a rolling boil.
2. Add the lemongrass, ginger, and cinnamon to the water, giving it a light stir.
3. Turn off the heat, cover the pot, and let steep for 5-7 minutes (longer if you like it stronger).
4. Strain the tea into your favorite mug using a fine mesh strainer.
5. Stir in honey or a squeeze of lime if desired, and sip slowly to savor.
Notes
Swap lemongrass for mint and add orange slices in summer for an iced version.
Increase cinnamon and add a clove in winter for a cozy, spiced variation.
Steep less time for milder tea, or up to 10 minutes for stronger ginger kick.
Reusing the herbs for a second lighter steep is common and still tasty.
