Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
2. Melt butter in a saucepan, then remove from heat and stir in sugar.
3. Whisk in the eggs and vanilla extract until smooth.
4. In a separate bowl, sift together flour, cocoa powder, and salt.
5. Gently mix the dry ingredients into the wet ingredients until just combined.
6. Pour batter into the prepared pan, spread evenly, and bake for 20-25 minutes.
7. Remove brownies from the oven and let them cool completely in the pan.
8. For the ganache, place semi-sweet chocolate chips in a heat-proof bowl.
9. Heat heavy cream until simmering and pour it over the chocolate chips.
10. Let the mixture sit for 5 minutes, then whisk until completely smooth and glossy.
11. Allow the ganache to cool and thicken for 10-15 minutes.
12. Pour the ganache over the cooled brownies and spread evenly.
13. Immediately sprinkle with rainbow candy-coated chocolate chips.
14. Let the brownies set for at least 30 minutes before lifting from the pan, slicing, and serving.
Notes
For a fudgy texture, do not overmix the batter and be careful not to over-bake. Store brownies in an airtight container at room temperature for up to three days.
