Ingredients
2 oz Vanilla Vodka
1 oz Pineapple Liqueur (or Coconut Rum)
2 oz Pineapple Juice
1 oz Heavy Cream
Ice cubes
Toasted coconut flakes, for garnish
Fresh pineapple wedge, for garnish
Instructions
1. Chill a martini glass by filling it with ice and water.
2. Prepare the glass by dipping the rim in pineapple juice, then in toasted coconut flakes.
3. Fill a cocktail shaker two-thirds full with ice.
4. Pour the vanilla vodka, pineapple liqueur, pineapple juice, and heavy cream into the shaker.
5. Secure the lid and shake vigorously for 15-20 seconds until the shaker is frosty.
6. Empty the ice and water from the chilled glass.
7. Strain the cocktail into the prepared glass.
8. Garnish with a fresh pineapple wedge and serve immediately.
Notes
For an extra frothy texture, shake the liquid ingredients without ice first (a ‘dry shake’), then add ice and shake again. The drink is best made fresh and served immediately as the cream will separate over time.
