Ingredients
2–3 chamomile tea bags or 1 tablespoon loose-leaf chamomile
1 cup hot water
1–2 tablespoons raw honey
1 tablespoon freshly squeezed lemon juice
1/2 cup sparkling water or club soda
Ice cubes
Lemon slice, for garnish
Fresh mint sprig, for garnish (optional)
Instructions
1. Bring 1 cup of water to a boil and pour it over the chamomile tea bags or loose-leaf tea in a heatproof mug or pitcher.
2. Let the tea steep for 10 minutes to create a strong, concentrated flavor.
3. Remove the tea bags or strain the loose leaves, then stir in the honey while the tea is still hot until fully dissolved.
4. Allow the chamomile honey mixture to cool completely in the refrigerator.
5. Fill a serving glass with ice and pour the chilled chamomile honey mixture over the ice.
6. Add the fresh lemon juice and gently stir to combine.
7. Top with sparkling water, garnish with a lemon slice and mint sprig, and serve immediately.
Notes
Adjust the honey to suit your desired sweetness level.
For a floral twist, steep a small sprig of lavender with the chamomile.
Add muddled berries for a fruity variation.
Store the chamomile honey base in the refrigerator for up to 3 days.
Do not serve honey to infants under one year of age.
