These no-bake Bunny Ear Eclair Dessert Cups combine the classic, creamy flavor of a chocolate eclair with a whimsical presentation. This simple layered dessert uses graham crackers, vanilla pudding, and chocolate frosting, making it an incredibly easy treat perfect for Easter.

1 (3.4-ounce) box instant vanilla pudding mix

2 cups cold milk

1 (8-ounce) container frozen whipped topping, thawed

1 sleeve graham crackers

1 can chocolate frosting

Mini marshmallows

Pink sanding sugar

Instructions

1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk for two minutes until thickened.

2. Gently fold the thawed whipped topping into the pudding mixture until well combined.

3. Create layers in 6-8 individual dessert cups by alternating broken graham cracker pieces with the pudding mixture, starting and ending with a layer of graham crackers.

4. Cover the cups and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften.

5. Spread a smooth layer of chocolate frosting over the top of each chilled dessert cup.

6. Create bunny ears by cutting mini marshmallows in half diagonally, dipping the sticky side in pink sanding sugar, and placing two on each cup before serving.

Notes

For the best cake-like texture, chilling the dessert overnight is highly recommended. Store covered in the refrigerator for up to 3 days; add the marshmallow ears just before serving for best results.
