A quick, flavorful, and light meal featuring savory ground beef served in crisp lettuce cups. Perfect for a healthy weeknight dinner or an impressive appetizer, this dish is ready in under 30 minutes.

Ingredients

1 lb ground beef (85/15 lean)

1 head Butter lettuce (or Bibb/Boston)

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 can (8 oz) water chestnuts, chopped

3 green onions, sliced, whites and greens separated

1/4 cup soy sauce (or tamari for gluten-free)

2 tbsp hoisin sauce

1 tbsp rice vinegar

1 tsp toasted sesame oil

Instructions

1. Wash and thoroughly dry lettuce leaves, setting them aside as cups.

2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart.

3. Drain any excess grease from the skillet.

4. Add the minced garlic, grated ginger, and the white parts of the green onions, sautéing for one minute until fragrant.

5. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.

6. Pour the sauce over the beef, stir to coat, and simmer for a few minutes until it thickens slightly.

7. Stir in the chopped water chestnuts and the green parts of the green onions and cook for one more minute.

8. Spoon the warm beef filling into the prepared lettuce cups and serve immediately.

Notes

Store leftover beef filling and lettuce cups in separate airtight containers in the refrigerator for up to 4 days. For variety, add shredded carrots or top with chopped peanuts. Ground chicken, turkey, or pork are great substitutes for beef.
