A quick, flavorful, and light meal featuring savory ground beef served in crisp lettuce cups. Perfect for a healthy, low-carb weeknight dinner that comes together in under 30 minutes.

Ingredients

1 lb lean ground beef (90/10 or 85/15)

1 yellow onion, finely chopped

2 cloves fresh garlic, minced

1 tsp fresh ginger, grated

1/4 cup low-sodium soy sauce or tamari

3 tbsp hoisin sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp brown sugar or honey

1 (8-ounce) can water chestnuts, drained and chopped

1 carrot, shredded

3 green onions, thinly sliced

1 head of butter lettuce (or iceberg/romaine)

Instructions

1. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, and brown sugar; set aside.

2. In a large skillet over medium-high heat, cook the ground beef and onion for 5-7 minutes until the beef is browned and the onion has softened.

3. Drain any excess grease from the skillet.

4. Add garlic and ginger to the beef, cooking for one minute until fragrant.

5. Pour the sauce mixture over the beef and stir to combine.

6. Bring the mixture to a simmer, then stir in the water chestnuts and shredded carrots.

7. Cook for 2-3 minutes until the sauce has thickened slightly.

8. Wash and dry the lettuce leaves.

9. Spoon the warm beef filling into each lettuce cup and garnish with sliced green onions to serve.

Notes

Store leftover beef filling and lettuce leaves separately in the refrigerator for up to 4 days. For a variation, use ground chicken or turkey, or add finely chopped mushrooms. Serve with toppings like chopped peanuts, fresh cilantro, or a squeeze of lime.
