Ingredients

1 box (0.3 oz) sugar-free flavored gelatin OR 1 packet (0.25 oz) unflavored gelatin

1 cup boiling water

1 cup cold water, divided

1 to 2 scoops unflavored protein powder (whey isolate or collagen peptides)

(Optional) Sugar-free water enhancer or syrup to taste, if using unflavored gelatin

Instructions

1. In a small bowl, whisk 1–2 scoops of protein powder into 1/4 cup cold water until smooth. Set aside.

2. In a medium bowl, pour 1 cup boiling water over gelatin powder and whisk until completely dissolved.

3. Add the remaining 3/4 cup cold water to the gelatin mixture and stir.

4. Slowly pour in the protein slurry while whisking continuously to combine.

5. If using unflavored gelatin, add sugar-free flavoring or syrup to taste and mix well.

6. Pour mixture into container or molds and refrigerate.

7. Chill for at least 4 hours until fully set before serving.

Notes

Always use sugar-free gelatin and sweeteners approved for your bariatric diet.

Avoid fruits like pineapple, kiwi, mango, and papaya in fresh form—they prevent gelatin from setting.

To prevent clumps, always dissolve protein powder in cold water before adding to hot gelatin.

Store in the refrigerator in an airtight container for up to 5–7 days.

Unflavored gelatin gives you more flavor flexibility using sugar-free enhancers or syrups.
