Ingredients

3 large overripe bananas, mashed

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

1/2 cup unsalted butter, melted and cooled

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips or dark chocolate chunks

Optional toppings: extra chocolate chips, chopped nuts, sea salt

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

2. Mash the bananas in a medium bowl until mostly smooth.

3. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.

4. In a separate bowl, cream melted butter with brown sugar and granulated sugar until well combined.

5. Add the egg and vanilla extract to the butter mixture and mix until just combined.

6. Stir the mashed bananas into the wet ingredients.

7. Pour the wet mixture into the dry ingredients and gently mix with a spatula until just combined. Do not overmix.

8. Fold in the chocolate chips or chunks, reserving a small handful for topping if desired.

9. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with reserved chocolate chips or toppings.

10. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.

11. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

12. Slice and serve warm or at room temperature for best flavor and texture.

Notes

For a double chocolate version, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients. You can also substitute chopped walnuts or pecans for extra crunch. This banana bread keeps well at room temperature for up to 4 days when tightly wrapped. For longer storage, freeze individual slices or the whole loaf for up to 3 months.
