Ingredients
2 oz amaretto liqueur
1 oz light or gold rum (optional)
3 oz pineapple juice (100% juice preferred)
2 oz orange juice (fresh-squeezed or high-quality bottled)
1/2 oz grenadine (for the “sunset” effect)
Ice, for serving
Pineapple wedge, orange slice, and maraschino cherry (optional garnish)
Instructions
1. Fill a highball or hurricane glass with fresh ice (chill the glass first if you’d like).
2. Fill a cocktail shaker halfway with ice.
3. Add amaretto, rum (if using), pineapple juice, and orange juice to the shaker.
4. Shake vigorously for 15–20 seconds, until the shaker is very cold.
5. Strain into the prepared ice-filled glass.
6. Slowly drizzle grenadine over the top so it sinks and creates a layered “sunset” look.
7. Garnish with a pineapple wedge, orange slice, and cherry if desired, then serve immediately.
Notes
For a pitcher (about 8 servings): mix 12 oz amaretto, 8 oz rum (optional), 24 oz pineapple juice, and 16 oz orange juice. Chill. Pour over ice and add grenadine per glass.
Sparkling twist: top with club soda, lemon-lime soda, or Prosecco just before serving.
Mocktail version: omit alcohol and add 1/2 oz orgeat (almond syrup) or 2–3 drops almond extract, then proceed as written.
Use grenadine sparingly—you can always add more, but too much will overwhelm the balance.
